If you’re the parent of a toddler, then you know you have to come up with some very creative ways to get your child to eat his or her vegetables. If your child is like my son who is an extremely picky eater, then you really have to break out the big guns in order to ensure a healthy and well-balanced diet.

That’s why I came up with the Hide-and-Seek Quesadillas. They are a great way to sneak healthy stuff into your toddler’s diet! Check it out!

ADD VEGGIES AND FRESH INGREDIENTS INTO FOOD PROCESSOR.

Since my son is very particular about textures and meat, I added some cooked ground turkey into the mix along with fresh baby spinach, avocado, tomatoes and seasonings. Feel free to add whatever fresh veggies you’d like.

BLEND FRESH INGREDIENTS DOWN INTO A SMOOTH PASTE.

PUT A FLOUR TORTILLA INTO A BUTTERED, HEATED SKILLET AND RUB THE FRESH INGREDIENT PASTE ONTO THE TORTILLA.

COVER THE PASTE WITH CHEESE AND COOK THE QUESADILLA.
